You’ve heard of the probiotics, Lactobacillus casei, “active” Bifidusa and other friendly bacteria that hide in the yogurts and fermented milks that we swallow every day. But who are these little health allies that we ingest by the millions.

Streptococcus thermophilus

Streptococcus thermophilus has been used since humans fermented milk, over 7,000 years ago!

Streptococcus thermophilus is one of the two probiotics that must be used in the manufacture of yogurts, with its partner the bacterium Lactobacillus bulgaricus.

Streptococcus is a bacterium of the streptococcus family, known by some of its dangerous representatives for health. But with this one, no risk, it is on the contrary an ally of our organism. In fact, humanity swallows a billion billion billion S. thermophilus every year.

Its beneficial effect for humans (which gives it the name of probiotic) is to improve the digestion of lactose and thus reduce problems of intolerance.

 

Lactobacillus bulgaricus

As the name suggests, this bacterium was first used in Bulgaria. Like Streptococcus thermophilus, Lactobacillus bulgaricus has been used since humans fermented milk, more than 7000 years ago.

Lactobacillus bulgaricus is one of the obligatory probiotics used to produce yogurts, with its companion Streptococcus thermophilus.

Lactobacillus bulgaricus is a bacterium that works in synergy with S. thermophilus in the production of yogurts. This produces lactic acid from lactose and is essential for the taste of yogurts. Its beneficial effect for humans (which gives it the name of probiotic) is to improve the digestion of lactose and thus reduce the problems of intolerance.

 

Lactobacillus acidophilus

Lactobacillus acidophilus is a probiotic that is increasingly used in fermented milks. There are several subgroups.

They can be added to certain fermented milks (Lactobacillus acidophilus johnsonii in LC1 from Nestlé).

Lactobacillus acidophilus is a probiotic whose benefits on transit (especially in the elderly) have been demonstrated. It also has an effect on the immune system, thus stimulating the body’s defenses.

 

Lactobacillus casei

Lactobacillus casei was discovered over 70 years ago. It is a probiotic added to fermented milks. There are several strains, for example Lactobacillus casei DN-114 001 and Lactobacillus casei Shirota.

They can be added to yogurt and fermented milk. (LC1, Actimel, Yakult…)

Before 2007, the assessment of allegations was carried out at national level by ANSES. But since the entry into force of Regulation 1924/2006, the Agency is no longer systematically called upon. The allegations are reviewed at European level by the European Food Safety Agency (EFSA – European health safety agency).

Only one file has been submitted concerning Lactobacillus casei DN-114
001 by Danone concerns reducing the risk of diarrhea caused by Clostridium Difficile by reducing the presence of toxins from this bacteria. The selection of this bacterium is favored by antibiotic therapy, age or a weakened immune system. However, this request for the allegation was refused by EFSA, which considered that the evidence was insufficient to establish a cause and effect relationship.

 

Bifidobacterium ou Bifidus

Bifidus were identified at the end of the 19th century.

They can be added in certain fermented milks (Activia from Danone, BA.)

There are many different bifidobacteria. The most used are Bifidobacterium bifidum, Bifidobacterium animalis or lactis and Bifidobacterium longum. If all bifidobacteria do not have demonstrated effects on transit, ANSES mentioned in its report on probiotics the interest of the active bifidus essensis strain on transit. In addition, a bifid like BB12 has shown an effect on the immune system.
